Cheater Stir Fry aka: ‘Crack Slaw’

Saving sanity on busy nights for years

I don't remember exactly where I picked up this recipe, or if it just seemed like a good idea on a busy night, but 'Crack Slaw' made it's first appearance in the Whetsel household back in 2018.

I started with the super quick (and basic) version the first time or two, then got a little 'fancier' with additional flavors and ingredients.  And when I'm feeling really fancy, I'll add slivered almonds or chopped dry roasted peanuts to finish the dish.

It's too good not to share--especially at this time of year when life tends to pick up speed....

Cheater Stir Fry aka: ‘Crack Slaw’

The Super Quick Version:

  • 1 lb. ground turkey, chicken or pork
  • 2 TBSP sesame or oil of choice (that handles higher heats well)
  • 1 bag coleslaw
  • Soy sauce or coconut aminos to taste

The ‘Fancier’ Version:

  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1/2 cup onion, diced
  • 5 green onions, sliced (white and green parts)
  • 1 lb ground pork
  • 1/2 tsp ground ginger
  • sea salt and black pepper, to taste
  • 14 oz bag coleslaw
  • 3 tbsp Coconut Aminos or soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp toasted sesame seeds
  • Optional: 1 tbsp Sriracha orgarlic chili sauce, more to taste

INSTRUCTIONS

  • Heat sesame oil in a large skillet over medium high heat.
  • Add the garlic, onion, and white portion of the green onions. Sauté until the onions are translucent and the garlic is fragrant.
  • Add the ground pork, ground ginger, sea salt, black pepper and Sriracha. Sauté until the pork is cooked through.
  • Add the coleslaw mix, coconut aminos, and rice wine vinegar. Sauté until the coleslaw is tender.
  • Top with green onions and sesame seeds before serving
